Ema’s chicken
Wash
well 1 lb. of boneless skinless chicken thighs and add seasoning
(I
use Mediterranean bland of herbs with sea salt)
Set
a deep pot on low heat with 1 spoon of olive oil.
When
worm, add the chicken and ½ cup of water.
Cover
and let cook for 15 to 20 minutes mixing every 3 to 4 minutes so the
chicken wont stick. After all the water evaporated and the chicken turned
golden color take of the heat.
Your
chicken is ready to eat.
Make your kids eat green peas
Set
a pot on medium heat. Add 1 spoon of salted butter. When melted add 1
pealed and thin sliced carrot. Cover and cook for 5 to 10 minutes stirring
from time to time until the carrots start getting brown the on the
corners. Add 1 cup of green peas (fresh or frozen, not canned). Mix well
and cook for another 5 minutes. Take off the heat and add another ½ spoon
of butter. Enjoy.
If
you would like to eat this dish, but can’t eat butter, use olive oil. In
this case add some salt.

Snow peas or peas in snow
Set
a pot on medium heat and add 1 spoon of olive oil. Add 1 small sweet onion
diced.
When
the onion starts to get brown on the corners (not more than 2 to 3
minutes) add 2 cups of snow peas or snap peas. Mix the peas with the
onions, cook 1 more minute, turn the heat off and add some feta cheese
crams to cover the peas. Let sit for 2 to 3 minutes and enjoy. If the
cheese you are using is not salted enough, add a pinch of salt before you
add cheese and mix.
